Is it possible to install Chef Manage on RedHat running on ppc64? There's an official RPM for server on ppc64 but not for Chef Manage on ppc64 (makes sense to have both, no?). Is there a SRPM available so I can build it on my own? Can it be built from the Chef Server source?

No.

Not necessarily, manage is not necessary to operate chef-server and the stack itself was not worth porting, both from our and customer investment. To my knowledge we only ever ported chef-server and chef-client.

chef-manage isn't open source so it lives in it's own private repo and as such neither source nor SRPMS are available publicly.
If you are a customer you could lodge that request to Support but given that manage is meant to eventually be eclipsed by other parts of the commercial kit I would think this unlikely to happen or be supported.
