Application/deploy LWRP Callbacks

If I explicitly set a callback for an application or deploy resource in my recipe, will the steps I specify be merged into the default functionality? Or, will I have to duplicate the default functionality, then add in my additional steps?

There is no duplication, callback hooks are run only at their designated time. This is a big part of the reason you shouldn't use the deploy resource. Just use the normal git resource and some execute resources and you'll be fine.
