Awesome stuff! I'm especially happy to see that quite a bit of chef-solo
love (like the --local option for knife and environments) went into this
release. Like!
Btw: is there already some basic search support (or is it planned) for
chef-solo like chef-solo-search [1] does?

Nothing planned from Opscode. chef-solo is a community driven tool and
any new features for chef-solo should be expected to come from the
community. Opscode engineering has really only used it so far as it
was a tool to get a Chef Server built and installed.

With the current awesomeness of chef-zero. I would think the need of chef-solo drops more and more everyday. We had used chef solo search to test stuff but now we just use chef zero.
Highly recommend.

I see knife bootstrap has an option for --bootstrap-version, but what is
the default value of that?
Whats the best way to update all my nodes to the new version of chef?

For upgrading nodes, use omnibus-updater:

I use omnibus_updater from the heavy water folks to do this across my environments.

The default version to pass along to bootstrapped clients used to be the
version of chef installed on your workstation, I'm pretty sure that hadn't
changed, so if you have 11.6 on your workstation, you'll get 11.6 on your
new nodes.
