Looking at https://downloads.chef.io/chef-client/ I see an array of packages for everything from RHEL to Windows to CISCO IOS even. But nothing for Fedora.
Why no Fedora? Specifically I am looking for the chef-version.x86_64.rpm.

Fedora users typically use the RHEL packages.

The rhel7 rpm works fine. Only issue is that chef does not natively support
dnf yet. There is a 3rd party provider, but I haven’t tried it.
