i’m looking to download a chef-server (omnibus) installer from
http://www.opscode.com/chef/install/ for ubuntu. I only see 11.x pkgs in the
drop-down menu. where can i get 10.x omnibus pkg? or, can i?

Omnibus packages for the server were new for Chef 11. For Chef 10 you just have to dive in the old fashioned way.

chef-server 10 does not exist as omnibus. And I strongly encourage you not to set up new servers on chef 10.
Is there a reason you want 10.x?

thanks for the feedback. i'll install the old fashioned way.
the reason to stay on 10.x is because we haven't done the work yet to ensure
all of our cookbooks, etc, work ok with chef 11. also, at this time i have
a rudimentary DR method for the chef 10.x server in case of catastrophy. i
know nothing at this time about how to wield chef 11 to recover it from
disaster, or make it HA.

You can update the server and clients separately, chef 10 clients will run just fine against a chef 11 server and all compat changes between 10 and 11 are related to the client.
