Just came accross that application recipe that sets up rails.
To use this, do I have to use application compatible recipes or can I mix
and match?
Is there any documentation on this new recipe format, and how to convert
existing recipes over if need be…

Both README files for application and application_ruby have examples.
Make sure to review those; feel free to ask any specific question you may
have after that.
