Migrating to new chef server

I am in the process of moving from an old chef server to a new one. The old
is at 10.16.2-1. I have installed 11.0.10-1 on the new one.

Is there any documentation on transferring the old data to the new server?
Is there documentation on how to install 10.16.2-1?
