As discussed in previous threads I’m trying to get a
multiple-chef-server-on-one-host environment going. (I think) the chef
server is up, I’d like to connect to it through the web UI.
Does anyone know what configuration variable to set for the webui?

Isn't it just the way -- I found the answer right after posting; the port
is specified in /etc/init.d/chef-server-webui which gets it's PORT
specification from /etc/sysconfig/chef-server-webui
